Scottish Bacon and Potato Pie

Scottish Bacon and Potato Pie is layers of thinly sliced potatoes, neatly piled on a bed of bacon. It is then seasoned with parmesan, spices and baked until the potatoes are tender and the bacon crisp. Phenomenal!

Ingredients
  

  • 9 slices bacon
  • 2 pounds Idaho potatoes
  • 1/4 cup parmesan cheese
  • 3 tbsp melted butter
  • cracked black pepper to taste

Instructions
 

  • Preheat oven to 425 degrees. Spray a deep 9-inch pie pan with nonstick spray.
  • Place strips of bacon into the bottom of the prepared pie pan. Lay the strips across the length of the pan and keep adding and while turning slightly, until the bottom and sides of the dish is covered with the bacon and looks like the spokes of a wheel.
  • Scrub potatoes and slice 1/4" thin. Layer the potatoes over the top of the bacon. Sprinkle with 1/3 of the parmesan cheese, drizzle with 1 tablespoon of melted butter and cracked black pepper.
  • Start another layer of potatoes on top of the parmesan cheese layer. You will repeat this layering 3 times with the top layer being a parmesan cheese, butter and black pepper. Press the potatoes down firmly before adding each cheese layer.
  • Place this into a preheated oven for approximately 45-50 minutes or potatoes are tender. You can poke the potatoes with a fork to ensure they are soft.
  • Remove from oven and let sit for about 5 minutes before inverting onto serving platter. Slice like you would a pie to serve.

Notes

**Depending on how fatty your bacon is, will determine how much bacon fat will be in the bottom of the potatoes, because of this, be careful when inverting the pie dish onto a platter**
