Preheat oven to 350 degrees and grease your Pullman Loaf Pan.
Pour lukewarm water to stand mixing bowl, add yeast and sugar. Let this sit for a few minutes. Then add honey, softened butter, buttermilk powder, salt and vanilla. Mix with dough hook for a few minutes and then add bread flour and mix until well incorporated, then let dough hook knead the dough for an additional 5 minutes.
When dough has been kneaded, place the dough ball into a greased bowl and cover with a clean kitchen towel or saran wrap and let sit until doubled in size, typically an hour.
Turn the dough out onto a floured surface and roll the dough out into a large rectangle or square. Then, spread softened butter over the flattened dough, sprinkle with brown sugar, cinnamon and chopped walnuts.
Roll the dough up into a pinwheel starting on the longer side. Try and keep the roll tight as you go. With a sharp knife, cut this long pinwheel in half, lengthwise. At the top, now pinch about an inch of the 2 halves back together, so the sections are attached at the top.
Now, lift up the far side piece of rolled dough and bring it up and over the other section and set it back down. Then, pick up the piece you just crossed and bring it up and over the top of the other piece that is laying on the counter. You will repeat this until you get to the end of the loaf. Then pinch the ends together at the bottom.
Now place this in a greased Pullman Pan and tuck the ends in, trying to maintain the shape. Sprinkle additional brown sugar over the top and place the bread into a preheated oven to bake for approximately 30 minutes or golden brown.
Once baked, remove the bread from the oven and let it sit in the bread pan for about 10 minutes, then remove it and place on a cooling rack to finish cooling.
Slice to eat. It can be toasted or slathered in melted butter to serve. Enjoy friends!!
