Cut meat into 1 inch cubes, salt and pepper meat, tossing to coat
Add the oil to a large pan, turn heat to high
Add meat to pan in a single layer, (listen for sizzle, the pan should be very hot!) Do not move or adjust meat for approximately 45 seconds to allow a crust to form, then flip over browning all all sides.
If you have a full pan and still need to cook more meat, remove the cooked meat to a plate and cook next batch of meat.
After all meat it cooked, reduce heat in pain to low, return meat to pan, add the butter and garlic, toss meat to coat for 1 to 2 minutes in sauce.
Serve on their own or over bed of mashed cauliflower, sprinkled with parsley or cilantro.
