BBQ Meatball Sandwiches

Ingredients
  

  • 4 large eggs
  • 2 packages Uncle Bens Ready Rice (Original White) Cook in microwave 90 seconds per package instructions and let cool before adding to meat mixture
  • 1-1/2 Tablespoons salt
  • 1 tsp black pepper
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons onion powder
  • 4 lbs lean, ground beef

BBQ Sauce

  • 2 cups ketchup
  • 1-1/2 cups brown sugar
  • 2 Tablespoons onion powder
  • 1 Tablespoon garlic powder
  • 1 Tablespoon liquid smoke
  • 6 sandwich rolls, split

Instructions
 

Meatball Instructions

  • Mix ground beef, eggs, both packages of cooled Uncle Bens Ready Rice, onion powder, salt, pepper and Worcestershire sauce in a large bowl.  
  • Form into 1 inch balls and place in a single layer on a foil lined cookie sheet.
    Preheat oven to 375 degrees and bake meatballs for approximately 20 minutes or until no longer pink in middle.
    Divide meatballs into servings of 30 meatballs per recipe.

BBQ Sauce Intructions

  • Add ketchup, brown sugar, onion powder garlic powder, liquid smoke to a sauce pan, stir together and heat on low until just bubbling.
    Add 30 meatballs and gently stirring just to coat meatballs.
    Split rolls and place approximately 5 meatballs per sandwich, can add extra sauce to sandwich to suit tastes.
