Low Carb Egg Bites are small muffin-sized bites of scrambled eggs, meat or cheeses you can eat hot for breakfast or room temperature for a wonderful snack.

Ingredients
  

  • 12 large eggs
  • 1/2 cup heavy cream
  • salt and pepper to taste
  • 1-1/2 cups grated, cheese (cheddar or goat cheese)
  • 1-1/2 cups meat or veg add-ins (bacon, sausge, spinach)

Instructions
 

  • Preheat oven to 350 degrees. Grease your muffin pan very well.
  • Place your eggs into a bowl or (large measuring bowl is best for easy pouring), add heavy cream and salt and pepper. Mix well.
  • Cook any meat (bacon, sausage, or chorizo) you want to add. I usually have about 1-1/2 cups of meat and vegetable to add. Additionally, I usually have 1-1/2 cups of different cheeses to add in with the meats or vegetable.
  • Place about 1/8 cup of add-ins in the bottom of muffin tin, add egg half way up muffin section, then add another 1/8 cup of add-ins on top of this and then more egg on top of the second layer of add-ins to fill until just about 1/4 inch below the full line to prevent spillage when cooking.
  • When all muffin sections are full of egg and add-ins, pop the muffin pan into the oven for approximately 17 minutes or egg is fully cooked.
  • Make sure to let sit a few minutes after removing from the oven. Then run a butter knife around the circumference of the muffin section to loose the egg and then scoop egg bite out. Enjoy!
