Low Carb Egg Bites

Low Carb Egg Bites are small muffin-sized bites of scrambled eggs, meat or cheeses you can eat hot for breakfast or room temperature for a wonderful snack.

Ingredients
  

  • 12 large eggs
  • 1/2 cup heavy cream
  • salt and pepper to taste
  • 1-1/2 cups grated, cheese (cheddar or goat cheese)
  • 1-1/2 cups meat or veg add-ins (bacon, sausge, spinach)

Method
 

  1. Preheat oven to 350 degrees. Grease your muffin pan very well.
  2. Place your eggs into a bowl or (large measuring bowl is best for easy pouring), add heavy cream and salt and pepper. Mix well.
  3. Cook any meat (bacon, sausage, or chorizo) you want to add. I usually have about 1-1/2 cups of meat and vegetable to add. Additionally, I usually have 1-1/2 cups of different cheeses to add in with the meats or vegetable.
  4. Place about 1/8 cup of add-ins in the bottom of muffin tin, add egg half way up muffin section, then add another 1/8 cup of add-ins on top of this and then more egg on top of the second layer of add-ins to fill until just about 1/4 inch below the full line to prevent spillage when cooking.
  5. When all muffin sections are full of egg and add-ins, pop the muffin pan into the oven for approximately 17 minutes or egg is fully cooked.
  6. Make sure to let sit a few minutes after removing from the oven. Then run a butter knife around the circumference of the muffin section to loose the egg and then scoop egg bite out. Enjoy!
