Crunchy Baked Chicken Tacos

Crunchy Baked Chicken Tacos are tender seasoned chicken and refried beans nestled in a taco shell and covered with yummy cheese before being baked into crunchy perfection!!

Ingredients
  

  • 10 premade Crunchy Taco shells the amount you need depends on the size of your baking dish.
  • 2 tbsp olive oil
  • 1 pound cooked, chopped or shredded chicken
  • 2 ounces taco seasoning
  • 1/2 cup water
  • 1 15 ounce can refried beans
  • 2 cups shredded or grated cheese use any cheese you have on hand
  • taco toppings of your choice

Method
 

  1. Preheat oven to 400 degrees. Prepare a 9 x 13 baking dish by spraying with nonstick spray.
  2. Arrange the taco shells into a standing position in the baking dish.
  3. Place oil into a skillet and turn to high. Then add chicken and saute for a few minutes. Add taco seasoning and water. Stir to combine the seasoning and chicken. Simmer until the water it absorbed.
  4. While the chicken is cooking, spoon 1-2 tablespoon of refried beans into the bottom of each taco shell. Then place a generous amount of seasoned chicken on top of the beans in each shell.
  5. Place grated cheese on top of each taco and pop into preheated oven for 10 minutes.
  6. When the crunchy tacos are done, top with your favorite items and enjoy!!

Notes

**Top each taco with what you love best! Maybe it is sour cream, lettuce, toms, olives, avocado or salsa**
