Hungry Man Breakfast

A campfire favorite of layered sausage, peppers, hash browns, eggs and melted cheese. A perfect Dutch oven breakfast!

Ingredients
  

  • 2 pounds grated, frozen, hash browned potatoes
  • 2 pounds breakfast sausage
  • 8 large beaten, eggs
  • 2-3 cups shredded, cheddar cheese

Method
 

  1. Place a 10-12 inch Dutch oven over hot coals, fry the breakfast sausage and green peppers in the Dutch oven. Break sausage up into smaller pieces as it cooks.
  2. Remove sausage and peppers when sausage is no longer pink. Cover to keep warm.
  3. Add hash browned potatoes to sausage fat and cook until soft, then flatten out along bottom of Dutch oven.
  4. Sprinkle the sausage and peppers over the top of the potatoes. Pour the beaten eggs over the sausage mixture, then sprinkle with the shredded cheese.
  5. Place lid on Dutch oven for about 20 minutes or until eggs are set.
  6. **You will need about 8-10 hot coals under the Dutch oven and 13-15 hot coals on top of Dutch oven**
