Ingredients
  

  • 2 cans 12.5 ounce ea. Canned Chunk Chicken If you have fresh chicken, you can use that instead
  • 3/4 cup mayonaise
  • 1 large avocado, cubed
  • 1/4-1/3 cup chopped, Cilantro adjust based on your love of cilantro
  • 1/3 cup pistachios or the size of a good handful
  • 1/2 cup chopped, red onion
  • 1 tsp onion powder
  • 1 tsp lime juice
  • 3/4 tsp chipotle powder

Method
 

  1. Drain liquid from both cans of chicken. Place this in mixing bowl.  
Chop onion, cilantro, avocado and add to bowl.
  1. Add all remaining ingredients and mix thoroughlyl
  2. Can be eaten on a bed of lettuce or as a sandwich.
