Simple Skillet Tamales
This skillet casserole is meaty, full of spices, salsa and soft tortillas mixed in for a wonderful, flavorful and filling meal.
- 1 pound ground beef
- 2/3 cups chopped, green bell pepper
- 2-1/2 cups salsa
- 1 cup frozen corn
- 4 Tablespoons water
- 6 corn tortillas, cut into 1/2" strips
- 3/4 cup shredded cheddar cheese
Cook beef and peppers over medium heat until meat is no longer pink, drain.
Stir in salsa, corn and water, bring this to a boil.
Stir in tortilla strips. Reduce heat, cover pan and simmer for 10-15 minutes.
Sprinkle with cheese and serve with a scoop of sour cream and additional salsa if desired.
