Simple Skillet Tamales

This skillet casserole is meaty, full of spices, salsa and soft tortillas mixed in for a wonderful, flavorful and filling meal.

Ingredients
  

  • 1 pound ground beef
  • 2/3 cups chopped, green bell pepper
  • 2-1/2 cups salsa
  • 1 cup frozen corn
  • 4 Tablespoons water
  • 6 corn tortillas, cut into 1/2" strips
  • 3/4 cup shredded cheddar cheese

Method
 

Cook beef and peppers over medium heat until meat is no longer pink, drain.
  1. Stir in salsa, corn and water, bring this to a boil.
  2. Stir in tortilla strips. Reduce heat, cover pan and simmer for 10-15 minutes.
  3. Sprinkle with cheese and serve with a scoop of sour cream and additional salsa if desired.
