Ingredients
  

  • 2 pounds grated, frozen, hash browned potatoes
  • 2 pounds breakfast sausage
  • 8 large beaten, eggs
  • 2-3 cups shredded, cheddar cheese

Instructions
 

  • Place a 10-12 inch Dutch oven over hot coals, fry the breakfast sausage and green peppers in the Dutch oven. Break sausage up into smaller pieces as it cooks.
  • Remove sausage and peppers when sausage is no longer pink. Cover to keep warm.
  • Add hash browned potatoes to sausage fat and cook until soft, then flatten out along bottom of Dutch oven.
  • Sprinkle the sausage and peppers over the top of the potatoes. Pour the beaten eggs over the sausage mixture, then sprinkle with the shredded cheese.
  • Place lid on Dutch oven for about 20 minutes or until eggs are set.
  • **You will need about 8-10 hot coals under the Dutch oven and 13-15 hot coals on top of Dutch oven**
