Baked Lemon and Garlic Chicken

Baked Lemon and Garlic Chicken is simply fantastic!! Juicy chicken thighs are baked in fresh lemon, garlic, white wine and spices.

Ingredients
  

  • 8 chicken thighs or equivalent chicken pieces
  • 1 garlic cloves from whole head
  • 2 large lemons, sliced
  • 1 tbsp dried thyme (or large handful of fresh)
  • 3 tbsp olive oil
  • 3/4 cup white wine
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Preheat oven to 325 degrees. Place chicken into a greased baking dish.
  2. Drizzle olive oil over chicken, then sprinkle with herbs, salt and pepper. Spread around and rub into chicken pieces.
  3. Peel cloves of garlic from one head of garlic and sprinkle on and around chicken.
  4. Slice lemon and spread slices around on and in baking dish. Pour wine into baking dish and cover with foil.
  5. Place foil covered baking dish into preheated oven and bake for 1-1/2 hours. Remove foil at 1-1/2 hour mark and leave in oven to crisp skin for last 30 minutes. Enjoy!
