Baked Lemon and Garlic Chicken

As much as I like to cook, and I REALLY like to cook, there are days when my energy is waning or the day has gotten away from me and my original meal plan gets tossed out the window. On these days, when I need an easy, yet super flavorful recipe for a great meal, this Baked Lemon and Garlic Chicken is what I pull out. Having a recipe that is good enough for company and easy enough that I can have it in the oven in 15 minutes is a real treat.

Baked Lemon and Garlic Chicken is simply fantastic!! Juicy chicken thighs are baked in fresh lemon, garlic, white wine and spices. OH MY!!

I have eaten a few other versions of lemon and garlic chicken in the past, but most of those recipes called for powdered versions of garlic or lemon. What I really love about this recipe for Baked Lemon and Garlic Chicken, is that I am using fresh lemons and garlic.

I love using whole foods when I can and being able to walk out onto my patio and pick a couple of lemons which I will use in their entirety, is awesome. I know some people like to use chopped garlic which can be found in a jar. I too have this in my fridge and love the convenience of that as well, but for this recipe, you will want to get a whole head of garlic and use the peeled cloves from that.

Baked Lemon and Garlic Chicken is super quick and easy to make, yet tastes delicious enough for company!!

The flavor of the garlic cloves after they have cooked in the lemon and white wine is phenomenal. It is one of my favorite things about making Baked Lemon and Garlic Chicken. The cloves are super soft, and slightly sweet with a hint of the white wine. Because the garlic is cooked in this fashion, it doesn’t leave you with rank garlic breath. I usually end up throwing in quite a few extra cloves of garlic and then we fight over who gets them when we serve up our chicken.

Chicken, no matter how you cook it, is amazingly versatile. You can choose to use breasts, a leg/thigh combination, just legs, just thighs or even a whole cut up chicken. Use what your family likes best or fits best in your budget. I have used all of the above and get rave reviews each and every time!

When you pull the pan of Baked Lemon and Garlic Chicken from the oven, you will notice lots of wonderful juices in the bottom of the baking dish. It is full of flavor and tastes amazing spooned over white rice, couscous or even creamy mashed potatoes. By nature, this is a low carb recipe. So, when we are carefully watching our carbs, I just spoon this chicken and sauce over fresh green beans or mashed cauliflower.

Ingredients
  

  • 8 chicken thighs or equivalent chicken pieces
  • 1 garlic cloves from whole head
  • 2 large lemons, sliced
  • 1 tbsp dried thyme (or large handful of fresh)
  • 3 tbsp olive oil
  • 3/4 cup white wine
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Preheat oven to 325 degrees. Place chicken into a greased baking dish.
  • Drizzle olive oil over chicken, then sprinkle with herbs, salt and pepper. Spread around and rub into chicken pieces.
  • Peel cloves of garlic from one head of garlic and sprinkle on and around chicken.
  • Slice lemon and spread slices around on and in baking dish. Pour wine into baking dish and cover with foil.
  • Place foil covered baking dish into preheated oven and bake for 1-1/2 hours. Remove foil at 1-1/2 hour mark and leave in oven to crisp skin for last 30 minutes. Enjoy!

    I love garlic! I’ll take a white pizza anyday of the week. That’s why this Baked Lemon and Garlic Chicken is an absolute hit with me. When I hear that it’s on the menu, I know that, now, i have something awesome to look forward to. But then again, i say that with almost everything she says that’s on the menu. I know, I know, lucky me.
