New Year’s Eve and New Year’s Day are huge in the world of snack foods and tasty appetizers. So, if you are hosting a party on either one of these days, it is a given you will want to be putting out a delicious spread for your guests. Both days are in celebration of the New Year, but they can have decidedly different vibes.

Pesto Puff Pastry Star is delicious layers of buttery pastry, twisted around herbaceous pesto and creamy ricotta cheese. Delicious!!

While New Year’s Eve is dressed up, balloons and ball drops in Time Square, New Year’s Day is a more relaxed, hanging out in your sweats, football watching kind of day. Lots of eating is happening at both shindigs, so you will want to stock up on the tasty treats!

There are some dishes good enough that they work during a fancier night of partying but also for a day of lounging and yelling at the tv. This Pesto Puff Pasty Star is just that appetizer. This looks so pretty, so it fits for the night party, but is a finger food so fits in perfectly for a New Year’s Day party.

This Pesto Puff Pastry Star is very impressive to look at, in fact it looks really detailed and time consuming, but it is really more of an allusion of difficulty. To make this, you will need puff pastry sheets. The beauty of puff pastry, is that when it is baked, it creates tons of light and crunchy, buttery layers.

To make a Pesto Puff Pastry Star for your next get-together or holiday party, you are going to roll out your thawed, puff pastry into two 12-inch pastry circles (you can use a dinner plate as a template). Then spread ricotta over the entire pastry circle, then top with the pesto over the top of the ricotta.

Carefully place the second pastry circle on top of the other. Sometimes I fold the pastry in half to move it around easier when placing it on top. Next, place a glass in the middle of the circle and press down to make an indent.

Now you will twist each strip twice, working 2 pieces at a time, twist them in opposite directions. Once the two strips are twisted, pinch the ends together, which will form the sections of the star. Repeat this with the remaining pie shaped strips and you will see it turned into the Pesto Puff Pastry Star.

Ingredients
  

  • 2 sheets puff pastry, thawed
  • 1-2 tbsp all purpose flour (to prevent sticking)
  • 8 ounces ricotta cheese
  • 8 ounces pesto

Instructions
 

  • Preheat oven to 400 degrees. Line a baking tray with a large piece of parchment paper.
  • Roll each sheet of puff pastry into a 12 inch round. You can use a dinner plate as a template. Place one circular sheet of puff pastry to parchment paper.
  • Spread ricotta cheese evenly over entire pastry circle. Then spread pesto over the top of the ricotta.
  • Carefully place the second round over the top fo the first.
  • Press a glass into the middle of the circle and press down to make an indentation. Then cut the round into 4 equal pieces up to the indentation.
  • Then cut each of the quarters into 4 pieces. You should be left with 16 pie shaped pieces. Once these are cut, pick up two pie shaped pieces and twist them twice in opposite directions then pinch the ends together, forming a section of the star. Repeat with remaining strips to make star shape.
  • Place into a preheated oven and bake 25-30 minutes or until golden brown. Enjoy!!

When done twisting the strips, place the baking sheet with the puff pastry into an oven preheated to 400 degrees for approximately 25 minutes or golden brown. When this comes out of the oven, let it cool for a few minutes and then slide to a serving tray if desired. To eat this, simply pull off sections of the star and enjoy!!
