Simple Low Carb Steak Bites

It can never be contested that I am a meat and potato girl. While I love a good pasta or fried chicken or even seafood for that matter, MEAT is my thang!  I love a good, juicy burger or a nice big steak right off the grill, but for the sake of others, I do need to break it up now and then.  We recently had the 4 little boys over for the day and I had thawed out 2 steaks the day before in anticipation of grilling those for just Craig and I.

I love meat and these Simple Low Carb Steak Bites are so easy to make and delicious in every bite!!

There were now 6 of us for dinner instead of 2, so I changed it up a little, strictly with the intent to stretch the meal a bit and wound up with a delicious plate of food that everyone enjoyed and that I call, Simple Low Carb Steak Bites. I had two Rib Eye steaks. They were large, but I didn’t weigh them, I’d guess they were between 16 and 20 ounces  when added together. You can use quite a few different cuts of beef for this; Tenderloin, Sirloin, New York Cut or Strip Steaks.

To make Simple Low Carb Steak Bites, I started by cutting the beef into 1 inch cubes.  I left the fat intact because that is where all the good flavor is, but I knew it would also further render down a bit, to add fat the pan and aid in searing the meat. After I cubed the steaks, I seasoned them with salt and pepper and let them sit for about 30 minutes while I made batch of fries for everyone.

These Simple Low Carb Steak Bites are both low carb and so flavorful, you’ll be making them often!

I then got out my iron skillet and added a small amount of cooking oil to the pan.  In order to cook the meat to medium rare and get a nice crust on the meat, I turned the heat to high. When you add meat to a very hot pan, it will form a crust on the meat touching the pan, if left untouched for about 45 seconds. This helps to seal in the juices. While I wanted the flavor of garlic and butter on the meat, it is important to know that the smoke point (the heat it can tolerate) is significantly higher with cooking oil than with butter. Butter would melt, then turn a golden brown and then burn rather quickly, so it is important to add butter at the very end. Garlic lends a wonderful flavor, but if you add it too soon, it burns and tastes bitter.

Ingredients
  

  • 1-1/2 pounds beef steak, cut into 1 inch cubes
  • 2 Tablespoons olive oil
  • 2 Tablespoons butter
  • 2 cloves minced, garlic
  • salt and pepper

Instructions
 

  • Cut meat into 1 inch cubes, salt and pepper meat, tossing to coat
  • Add the oil to a large pan, turn heat to high
  • Add meat to pan in a single layer, (listen for sizzle, the pan should be very hot!) Do not move or adjust meat for approximately 45 seconds to allow a crust to form, then flip over browning all all sides.
  • If you have a full pan and still need to cook more meat, remove the cooked meat to a plate and cook next batch of meat.
  • After all meat it cooked, reduce heat in pain to low, return meat to pan, add the butter and garlic, toss meat to coat for 1 to 2 minutes in sauce.
  • Serve on their own or over bed of mashed cauliflower, sprinkled with parsley or cilantro.

When I made these Simple Low Carb Steak Bites they were an immediate hit! The boys love steak and the added flavor of garlic butter was a hit, but if you serve anything in a cube to a little boy, you gotta know it’s going to be a winner. We served these with French fries because that is all I had on this particular day, but I prefer these steak bites served over mashed cauliflower drizzled with the garlic butter and meat juices. Enjoy friends!

    I had pinned this recipe for mu husband to make for us. He is the chef of the family, but I tend to find what I want him to make. It was DELICIOUS !!!! Our kids loved it. We have decided to make this for our neighbors for our next potluck.
