I love Mexican food! I was born and raised in Southern California, so my affinity for all things involving tortillas, salsa or guacamole comes naturally. Lucky for me, Craig makes the very best refried beans I haver ever had. He doesn’t make them too often because they do take quite a while to get just right. However, when he does, he uses a HUUUGE pot to share with others and to freeze for future meals. There are days though, when I just want something simple for dinner, something that has a little Mexican flair, but is quick and easy. One of my favorites is Simple Skillet Tamales.
Pull together a quick weeknight meal with Simple Skillet Tamales!!
These don’t actually look like a tamale. They look more like you had a few homemade tamales, then put on a blindfold and then opted to juggle them before cooking them. It ain’t pretty, but it is delicious! Simple Skillet Tamales became a favorite the first time we tried them. I love the soft texture of the tortillas and the combination of corn, peppers and spices. You do have control over the level of heat based on your choice of salsa. I typically like them medium-hot and then I can add a dollop of sour cream to tame the heat it needed.
The nice thing about this recipe is that it is adaptable. I think adaptability is a theme for much of my cooking style. If you don’t have a recipe item, sub in something else and create a new flavor profile. In this case, if you don’t have ground beef, use ground pork, ground chicken or turkey. The bell peppers lend an awesome flavor, but if you want to add jalapeños or diced green chilis too, go for it! Use any salsa you have or sub in a little canned enchilada sauce and cut yourself a break. Simple Skillet Tamales are just that , simple. Don’t make it harder than it has to be.

Simple Skillet Tamales
Ingredients
- 1 pound ground beef
- 2/3 cups chopped, green bell pepper
- 2-1/2 cups salsa
- 1 cup frozen corn
- 4 Tablespoons water
- 6 corn tortillas, cut into 1/2" strips
- 3/4 cup shredded cheddar cheese
Instructions
Cook beef and peppers over medium heat until meat is no longer pink, drain.
- Stir in salsa, corn and water, bring this to a boil.
- Stir in tortilla strips. Reduce heat, cover pan and simmer for 10-15 minutes.
- Sprinkle with cheese and serve with a scoop of sour cream and additional salsa if desired.
As much as I like to cook, I don’t like doing dishes. The beauty of these Simple Skillet Tamales is that it only messes up one pan! It couldn’t get much easier than that. These taste like you put in way more time and effort than you did, but its another quick an easy recipe to add to your meal rotation. I like to top these off with grated cheese, avocado, chopped red onion, sour cream and a little cilantro. Enjoy friends!!
