Dutch Oven Peach Raspberry Cobbler

I love to camp, and I love to bake, so me coming up with recipes that meld two of my favorite pastimes is a no-brainer. I don’t mind store bought pastries or baked goods, but if I am out camping for more than a couple of days, and the night is cold and the coffee is hot, I want to bake something over the campfire or in my Dutch oven!

Dutch Oven Peach Raspberry Cobbler tastes delicious and is the perfect ending to a night spent out under the stars!!

I love cobblers and crisps, pies and cakes, so all of them are fair game for my trial and error in campfire baking. One of my all-time favorites to make is a cobbler. Cobbler is hearty, not fussy nor delicate, it stands up to the varying elements and comes out delicious even if it isn’t always pretty. There are several cobbler recipes I choose from when I am camping, but tender peaches and raspberries cooked in a buttery, cinnamon syrup and nestled in a sweet cake-like pillow is near perfection. This Dutch Oven Peach Raspberry Cobbler is a super quick recipe, with minimal ingredients.

If you like another fruit better than peaches, and raspberries, like blackberries, cherries or even apples, you are welcome to use them. This recipe is very adaptable. I sometimes use frozen fruit, sometimes fresh or even cans of various pie filling. So, for Dutch Oven Peach Raspberry Cobbler or whatever you will call it, pick the fruit you like and go with it!

Dutch Oven Peach Raspberry Cobbler is always a crowd pleaser!!

I typically make this Dutch Oven Peach Raspberry Cobbler in my 12 inch Dutch oven because it creates the optimal oven-like atmosphere. You will want to maintain a temperature of approximately 350 degrees and in a 12″ Dutch oven, that means about 15 hot coals evenly spread under the pot and approximately 15 hot coals placed on the lid of the Dutch oven lid. It doesn’t have to be in placed in or around the campfire, it can be placed in a fire safe area on cleared dirt. The cobbler will need to bake 30 minutes or until cake mixture is set.

Start by preparing fruit. Mix peaches and raspberries with sweetener and cinnamon and place in bottom of the Dutch oven. Mix oil, and water into the cake mix and stir until all ingredients are well incorporated. Pour this wet cake mixture over the top of the peaches. Place lid and set over hot coals, carefully placing hot coals on Dutch oven lid and let bake. Set your timer, 30 minutes was perfect for me.

Ingredients
  

  • 1 pkg yellow, cake mix
  • 1 bags of each frozen, peaches and frozen raspberries *2 bags of frozen fruit total*
  • 1/2-3/4 cup granulated, sugar depending on the sweetness of your fruit
  • 1 tsp cinnamon
  • 1-1/4 cup water
  • 1/2 cup cooking oil

Instructions
 

  • Mix peaches and raspberries in the cinnamon and sugar and pour into the bottom of a prepared Dutch oven.
  • Mix water, oil and cake mix together and pour over the fruit.
  • Place lid on Dutch oven and place over 15 hot coals evenly spread out. Then place 15 hot coals on lid of Dutch oven.
  • Let bake approximately 30 minutes or until cake is set

When we take the travel trailer, we can keep the ice cream frozen, so I like to put a scoop of vanilla ice cream on top, or if we are tent camping, I pack whipped cream in the cooler to top this cobbler off, but it is excellent with or without. Eat this warm or let the leftovers cool overnight and serve it for breakfast the next morning with a cup of piping hot coffee or cocoa for an extremely satisfying breakfast. Enjoy friends!
