This is a quick and easy recipe for those nights when you need to make dinner, you have a couple pounds of ground beef and no idea what to do with it. You know you need to feed your family in a hurry, and everyone is tired and hungry after a busy day (including yourself!). This is the recipe I turn to on those nights. This recipe for Low Carb Cheeseburger Pie is tried and true. I don’t make this because it is low carb, that is just coincidental. I have been making this for more than 30 years and it has never, ever, failed me!
Low Carb Cheeseburger Pie is my go-to, reliable, quick and easy meal that everyone loves!!
I can almost guarantee you I always have the basics for this recipe on hand. Ground beef is something I stock up on when it is on sale. Extra grated cheese is always in the freezer. Cream is a given since I use it in my coffee and eggs are coming out of our ears because my chickens are laying machines!! In fact, the last time I made this, was only because I was looking for another way to use up our endless supply of eggs.
I like the versatility of this dish. While Low Carb Cheeseburger Pie is made from basic ingredients, you can alter them to suit your specific tastes on any given evening. Sometimes, I like to sauté chopped onion in with the beef, or add chopped, cooked bacon to the mixture before baking. I also like to add chopped jalapeños or a dash or two of chili powder or even chipotle chilies. I have made this with pepper jack cheese instead of cheddar and topped it with sliced avocados, black olives and sour cream. My favorite way to eat it though, is served with chopped, fresh tomatoes, avocado and ketchup on top!!
Low Carb Cheeseburger Pie is hearty and cheesy. It is just a wonderful casserole that tastes even better reheated the next day!
I start by browning the beef in my cast iron skillet, making sure to salt and pepper it to taste. Drain off the excess grease and return the cooked, ground beef back to the skillet. In a separate bowl, I mix the mayo, cream, eggs, onion powder and 3/4 of the grated, cheddar cheese. Once I have this mixed together, I then simply pour-it over the cooked beef in the skillet. Sprinkle remaining cheese on top and pop it into the oven to bake for approximately 30 minutes.
Once the Low Carb Cheeseburger Pie is cooked, I like to let it sit for 5-10 minutes to cool just a little. This is simply to make it easy for me to cut it and have it remain in that shape when I serve it up. If we were in a hurry, there really is no other reason to wait, just grab a spoon and dish it up and eat.
Low Carb Cheeseburger Pie
Ingredients
- 2 pounds ground, beef
- 4 large eggs
- 1/2 cup cream
- 1 cup mayonaise
- 3 Tbsp onion powder
- salt and pepper to taste
- 16 ounces grated, cheddar cheese
Instructions
- Brown ground beef and drain. Return to oven safe skillet or pour into a greased baking dish.
- Mix together eggs, cream, mayo, onion powder, salt and pepper, and 3/4 of the grated cheddar cheese. Pour this over the cooked, ground beef.
- Sprinkle remaining grated, cheddar cheese over the meat mixture and pop into a preheated 350 degree oven for 30 minutes or until bubbling around edges.
- Remove from oven and let stand for 10 minutes, then server. Enjoy!
I sometimes make a BIG batch and then bake it in a 9 x 13 glass dish. This allows me to feed a big crowd. I let it cool just a bit, then it cuts nicely into squares and makes for easy serving at functions. I hope you give this simple and delicious recipe for Low Carb Cheeseburger Pie a try. Loved loved loved! I was about to make a keto taco pie but decided to see what else was out there so glad I did! I only made it by cutting ingredients to 1/2 but I made a few additions. First what cheeseburger is complete without mustard? I added a tablespoon of garlic powder in addition to the onion powder. Then I had no green onions but truthfully would you put green onion on your cheeseburger? Not me..I would put pickles on it…. So I did! I topped it with more cheese and it was one of my favorite dishes! Thank you for this wonderful recipe.
I LOVE your adaptations! I have used pickled jalapenos (the sweet and hot kind) instead of green onions and of course chopped pickle on occasion. That is one of the awesome things about this recipe, you can make it your own!! So glad you like it!
What size pan did you use for half the recipe?
