I love old school, back to basic cooking. I know we are all holed up in our homes, trying to eat what we have on hand, in order to prevent risking exposure to the Coronavirus. We have at some point, ventured out, fearful of bringing home the seeds of illness to our family.  I know for those that don’t like to cook or don’t really know how to cook, you are being challenged right now. I have a recipe for Classic Old Fashioned Rice Pudding you are going to love.

Classic Old Fashioned Rice Pudding is basic pantry ingredients of rice, brown sugar, vanilla and milk. This is cooked slowly on the stove top to create a creamy, sweet pudding that is an absolute treat!!

These are interesting times. I have heard the most discomfort from the #StayHome order, from those that have relied on processed or convenience foods as the bulk of their meals in the past. I know with two working parents and busy schedules, time for cooking and family dinners were often back burnered. Now, due to lack of supplies or lack of cooking experience, coming up with a good meal or a yummy dessert with minimal options is a bit stressful.

My challenge for you though, is to look online, phone a friend, look through my blog. If you are lucky enough to have one of your grandparents old cookbooks to look at, peruse the pages and you will find simple ingredients listed for the recipes. Most are very basic items, when put together, create a delicious meal.  This recipe for Classic Old Fashioned Rice Pudding is one of them. 

Classic Old Fashioned Rice Pudding is so delicious served warm or cold, with yummy toppings of apple slices, walnuts or raisins to suit your tastes.

Classic Old Fashioned Rice Pudding

Ingredients
  

  • 4 cups milk
  • 1/2 cup brown sugar
  • 1/2 cup uncooked rice
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions
 

  • In a medium saucepan, combine, milk, sugar and salt and bring to a boil over medium heat.
  • Stir in the rice and turn the heat down to low. You want to make sure the milk is just at a very gentle simmer.
  • Stir occasionally to prevent sticking. Cook for about 40 minutes or until mixture has thickened to the consistency of yogurt.
  • Once thickened, remove from heat and stir in vanilla.
  • Spoon into dishes and sprinkle with cinnamon if you like. Can be eaten warm or cold. Enjoy!

**wonderful toppings are nuts, different types of fruit such as; apples and raisins or spices like cinnamon and nutmeg. **
