Instant Pot Green Chile Crack Chicken

I am not sure what took me so long to decide to get an Instant Pot. I guess I felt like I was doing fine without it and if I didn’t know what I was missing, then what was there to miss? Once I finally gave in and purchased an Instant Pot, it has been no holds barred on trying out recipes to prove it incapable of being as good or reliable as my regular cooking methods.

Instant Pot Green Chile Crack Chicken has a creamy ranch flavor, with smoky bacon and yummy green chiles! It is delicious!!

So far, so good though. Instant Pot is hanging tough and proving some of my older methods time consuming. One of my favorite recipes converted from the simple crock pot is Instant Pot Green Chile Crack Chicken. I typically buy skinless, boneless chicken breasts when they go on sale and freeze them for a few rotating recipes. Instant Pot Green Chile Crack Chicken is one of them.

The basic version of this recipe has been making the rounds on the internet for several solid years, so I am not sure who the originator of this recipe was. I tasted the original recipe and I liked it, but I felt like it needed more……..something. So, I experimented and tweaked the ingredient ratios to suit my taste and added a nice earthy kick in the rear with some of my favorite Hatch’s Green Chiles.

Instant Pot Green Chile Crack Chicken is so versatile!! Eat it as a warm dip with crackers, on a sandwich or even rolled up in a tortilla!!

I love just about anything with ranch flavor, but add Hatch’s green chiles and we are talking a bonafide winner in so many categories. There is a small, restaurant a few minutes from my home, down an old road, sitting under some huge oak trees and one of the items on their menu is a ranch chicken sandwich. It didn’t occur to me until recently that what they are serving is very likely an iteration of Crack Chicken. It just goes to show you this stuff is good if they are serving this in restaurants and just calling it something else.

To make this Instant Pot Green Chile Crack Chicken, you need an Instant Pot (or do it in a crock pot over 5-6 hours, if you don’t). I use skinless, boneless chicken breasts and three 8-ounce blocks of cream cheese. I then sprinkle them with the powder from the packet of ranch seasoning. Place the chicken and cream cheese into the bottom of the Instant Pot and add 1/4 cup of water.

Place the lid on the Instant Pot and press Manual High Pressure for 15 minutes. Once the timer goes off, you will carefully use the quick release valve to let off the steam and remove the lid. Keep the Instant Pot set to low temp. You will now need to shred the chicken.

Ingredients
  

  • 7-8 slices smoky bacon, cooked cut into pieces
  • 3 pounds boneless, skinless, chicken breasts
  • 2 packet Ranch Seasoning
  • 3 8 ounce cream cheese
  • 1/4 cup water
  • 2 cups shredded cheddar cheese
  • 2 4 ounce Hatch's Green Chiles

Instructions
 

  • Place chicken, cream cheese, Green Chiles and water into Instant Pot. Sprinkle Ranch Seasoning over the top.
  • Place lid on Instant Pot, set Manual High Pressure for 15 minutes. When done, do a quick release to let off steam.
  • Remove chicken and quickly shred (I put the chicken in bowl with tall sides and then use my hand mixer, it will be shredded in just a minute or so). Add shredded chicken back to Instant Pot.
  • Add shredded cheese and cooked bacon, stir to incorporate and Enjoy!!

Notes

I eat this on buns as a sandwich or heat in a shallow dish for a warm dip with crackers or sour dough bread pieces.

    Hi Oma Darling,
    I make something similar but love the idea to add the chilis. I will be sure to give that a try next time as I do love a little spice. Hatch chilis are easy to find here in Colorado, so this is a no-brainer. Your idea to put this in an avocado is amazing. I put avocado on everything, or at least I thought I did. Now it will really be on everything I eat.
