This wonderful Low Carb Chipotle Chicken Salad is so flavorful! It is the perfect combination of tender, chunk chicken, creamy mayo, smoked chipotle, avocado, crispy onion, cilantro and crunchy pistachios. It is delicious, easy to make and economical.

I made up this recipe one day while waiting for my daughter-in-law to come over. We had planned a few hours together to catch up on a reality show we both enjoy. Knowing my daughter-in -law was busy and probably didn’t stop for lunch, I wanted to make sure she had something to eat that was satisfying and developed especially for her.

There are many wonderful chicken salad recipes and I have tried quite a few, but they were typically lacking in a memorable flavor. I wanted to jazz up the standard chicken salad and add a little something extra. I always have cans of chunk chicken in the pantry and I love chipotle, so I just continued to rifle through the fridge and pantry until I had gathered up items I thought would compliment each other. My new Low Carb Chipotle Chicken Salad was born.

This Low Carb Chipotle Chicken Salad is everything!

This is a great recipe to make ahead of time. You prep it once and can eat it several times throughout the week. I like it for a quick lunch or snack. I often make Low Carb Chipotle Chicken Salad and put it in Tupperware and place it in the cooler when we go camping. Serve it over fresh, crispy, lettuce or with homemade tortilla chips to scoop it up, or on fresh croissants, with lettuce and tomatoes.

Ingredients
  

  • 2 cans 12.5 ounce ea. Canned Chunk Chicken If you have fresh chicken, you can use that instead
  • 3/4 cup mayonaise
  • 1 large avocado, cubed
  • 1/4-1/3 cup chopped, Cilantro adjust based on your love of cilantro
  • 1/3 cup pistachios or the size of a good handful
  • 1/2 cup chopped, red onion
  • 1 tsp onion powder
  • 1 tsp lime juice
  • 3/4 tsp chipotle powder

Instructions
 

  • Drain liquid from both cans of chicken. Place this in mixing bowl.  

Chop onion, cilantro, avocado and add to bowl.

  • Add all remaining ingredients and mix thoroughlyl
  • Can be eaten on a bed of lettuce or as a sandwich.

I never order chicken salad at restaurants, because they are usually heavy on celery and light on flavor. My homemade version is light, fresh tasting and made with unique, flavorful ingredients.
